It's all about the food!
I hosted a birthday party on the weekend and I had a whole bunch of raw cauliflower left that I didn't end up needing for the veggie trays. I also had a big brick of marble cheese left over. I hate to waste food, so I thought I would whip up something that combined the two ingredients and this is what I came up with. It was really tasty and went well with the steak I cooked.
Makes 6 servings, 5 PP per serving if made according to the recipe. (if you switch to light butter and 1% milk, it will be 4 PP per serving)
4 oz reduced fat grated cheese (I used marble, but cheddar is also good for a sharper taste)
1 to 2 more oz reduced fat grated cheese (for topping)
1 head of cauliflower (remove the leaves and cut up into florets)
2 TBSP butter
2 TBSP flour
1 cup whole milk
1 dash of salt
1 dash of black pepper
1 pinch of grated nutmeg
I was born in Cape Breton, Nova Scotia and spent the first half my life there. I became a mom just after I turned 20 and within a couple of years, decided to move from a small town to a bigger city to take advantage of better job opportunities. After a few great jobs, I finally settled in at a legal publishing company. 13 years later, I'm still there.
