I think I subconsciously buy too many bananas because I like having an excuse to bake! There are so many things you can bake with bananas.
Once again, my bananas were too ripe to actually enjoy them as is. I already made Blueberry Banana muffins. I already made Strawberry Banana muffins. I thought that I should make something other than muffins.
So this is what I decided to make.....
My "significant other" recently bought a whole basket of peaches. I knew he wasn't going to eat all those peaches by himself, even though he thought he would. And of course...I was right! (As always, we tend to know our partners better than they know themselves.)
Yesterday, when I realized that most of the peaches were still sitting there, I told him I would bake him a dessert. That's the real way he likes to eat fruit.
I had all the ingredients on hand, so this morning I whipped him up a dish of yummy....
**To peel peaches: before halving or cutting, immerse in boiling water for 40 seconds and then immediately dunk in cold water. This will help with peeling and also make the peaches juicier.
Really nice if served warm with a scoop of vanilla ice cream on the side!
Sometimes I just don't want to cook a big dinner. I want something healthy, but quick and easy. Omelettes are a great option. You can tailor them to your own tastes and you can make an individual serving or you can increase the eggs and share with a friend!
I was rooting through my freezer and came across a large bag of chopped spinach that I needed to start using. I also found the end of a bag of frozen mushrooms. Spinach and mushrooms are a great combination in my opinion and work well with eggs. So this is what I created.....
