It's all about the food!
A few weeks ago I bought some cake mixes when they were on sale. It's always good to have some on hand because you never know when you might have a cake emergency! Take last night for instance. I wanted to bring a treat to work for my co-workers today, but didn't want to go through the hassle of digging out all the ingredients to make something. Let's do a cake mix!
Now, cakes from a mix are pretty simple to make, but of course, they just don't taste the same as cakes made from scratch. So I decided to get adventurous. What can I do to make this cake taste like more than a mix cake? I know, I'll add some stuff to the mix. Let's see...what's on hand that I can experiment with?
I had everything on hand to make a Coca Cola cake...except Coke. Sent my nephew out to get some and proceeded to make the most delicious, light, moist chocolate cake from a mix...ever.
Here's how I did it:
Chocolate Coca Cola Cake
1 box (15.25 oz) Chocolate Fudge Cake Mix (or devil’s food)
1 small box (4 oz) Instant Chocolate Pudding mix
Ingredients listed on back of cake mix box (eggs & oil - water not needed)
1 1/3 cups Coca Cola
1 stick unsalted butter (1/4 of a pound)
2 tbsp. unsweetened cocoa
4 – 6 tbsp heavy cream (or 3 – 4 tbsp milk)
2 cups (packed) powdered sugar
1 tsp vanilla extract
½ cup chopped pecans (optional)
If the cake has a dip in the middle, just spread the frosting away from the center as best you can. Sprinkle with pecans.
I was born in Cape Breton, Nova Scotia and spent the first half my life there. I became a mom just after I turned 20 and within a couple of years, decided to move from a small town to a bigger city to take advantage of better job opportunities.
