If you are looking for a low cost, healthy, tasty side dish, then try this veggie bake. It's loaded with veggies and so easy to make.
**For those following WW Points Plus plan, this would work out to 3 PPV when divided into 6 servings, 4 PPV when divided into 4 servings.**
1 to 2 tsp shortening
1/2 tsp minced garlic (bottled)
1/2 a white (sweet) onion
1 small to med zucchini (depends on size of baking dish)
I large yam (sweet potato)
2 large Roma tomatoes, firm
1 tsp dried thyme
pepper (to taste)
reduced fat shredded cheddar cheese

I was born in Cape Breton, Nova Scotia and spent the first half my life there.
